There’s a new, and very good, reason to go to Silver Spring: brunch at Urban Butcher, a carnivorous oasis located on Georgia Avenue. This butcher shop and upscale-yet-unpretentious restaurant focuses on all things meat, with award-winning charcuteries, 60-day dry aged steaks, pastramis, and more. The restaurant has quite the loyal following in Silver Spring, and I’ve been up there a few times for the charcuterie and steak frites.

The Butcher has just launched brunch, which is a bottomless-and-endless carnivore’s delight, served family style, with an endless array of Spanish tapas and sliced meats being whisked to your table. Priced at $45, the Carnivore’s Brunch includes bottomless lavender margaritas and mimosas, family-style servings of house-made charcuterie, empanadas, and grilled rustic bread.

The second course includes family-style portions of malted pancakes with honey butter, French toast with apple butter, omelets with smoked gouda, and scrambled eggs. The third course is a skillet of sliced meats, including chicken, ham, steak, chorizo, and more, served continually into said skillet for your table until you cry “have mercy!”

The meat is accompanied by eggs, salad, and home fries. The final course is house-made doughnuts with Nutella whipped cream—all for $45. (Read on for what we thought and a giveaway at the end!)

The two beverages available as part of the bottomless brunch are a classic mimosa, made with fresh OJ and served in a coupe glass, and a house-made, craft lavender margarita, which is tart, crisp and interesting. It’s delightful.

The first course is delicious, of course, if you enjoy charcuterie and can appreciate good meats. The wooden tray of charcuterie features samples from the butcher’s meat cellar, including the award-winning Diablo, which is a hard, spicy salami that will have you reaching for more.

Chef Raynold is Cuban, and the guy makes a mean empanada—not unlike the ones my mama makes! The fried, crispy pastries are filled with ground beef, tomatoes, and olives, and I could literally live on them. Then again, empanadas are hands-down my favorite food.

The quality of the bread and pastries at Urban Butcher is surprisingly delicious, beginning the bread service of grilled rustic bread with whipped lime butter, and continuing with the ever-so-moist French toast with apple butter.

When it comes time for the meats, a skillet is placed at the center of your table, and it’s piled with slices of roasted tenderloin, chorizo, ham, pastrami, and all sorts of other decadent meats being piled into the skillet, until you decide (if you decide) to stop. This is a must for anyone who loves meat, or likes to eat a lot.

The skillet of meats comes with family-style servings of a salad of mixed greens tossed in a light dressing, home fries with grilled onions, and fried eggs. You probably won’t have room for much by this point, but it’s all worth making some. The sides are clean, fresh, and well-executed—complementing, but not detracting from, the meats.

The entire experience is overwhelming in a good way—you’re sitting there drinking your lavender margarita and still enjoying the bread and empanadas, while more and more food comes to your table. You don’t know where to begin, or where to stop, you just know that you’re happy—and boy, this meat is delicious.

By the time the grand finale arrives, the doughnuts, you know you can make room for more. These fluffy, warm, and soft doughnuts are lightly fried and tossed lightly in sugar. They’re served alongside an equally light and fluffy house-made Nutella whipped cream for a divine confection that’s sweet, satisfying and surprisingly light.

We’ll raise another of the Butcher’s lavender margaritas to that.

The Bitches say: A+. This is one of the best deals in Washington, and absolutely worth a trip to Silver Spring—a carnivore’s delight, plus excellent craft cocktails (we love the lavender margarita), French toast and —oh my god, those Nutella doughnuts.
