Prosciutto Purses with Truffled Mascarpone
- Source some really good, naturally cured, and humanely raised Prosciutto
- Same with the mascarpone, if it’s grass-fed, even better
- Truffle oil, white or black
- Lightly boil chives on stovetop, drain, set aside to cool
- In a small bowl mix 4 parts mascarpone with 1 part truffle oil and a touch of salt
- Spread single piece of prosciutto. Scoop about 1 teaspoon of truffled mascarpone into center
- Bring together four corners of proscuitto and use your fingers to cinch in the middle, just above where mascarpone ends
- Tie center with chive tie
