What is it with men and cheesecake? Even if they don’t have a sweet tooth, most men love a good cheesecake. And, as they say, the way to a man’s heart is through his stomach. (But honestly, do they really say that?)

Thus, when “cooking” for my new beau (read: ordering ScratchDC delivered and then stumbling my way through the instructions at record speeds),  I thought it wise to also bake, since I can actually accomplish that on my own accord.

Cindy Sue (that’s my Momma) has been making her very delicious, relatively healthy, light-and-fluffy cheesecake dubbed the “Impossible Cheesecake” for decades now. When I was young, I actually thought it was impossible to make, as in it took days to prepare, and no one else in the whole-wide-world could do it. And, wasn’t I just the luckiest little girl to have such an amazing mother who could do such impossible things and did so for me, no less? Christ, the woman was a goddess.

Years later, Mom divulged the secret behind the impossible cheesecake: that it wasn’t impossible at all. It requires a mere six ingredients, a blender, approximately 8 minutes to prepare, and then an hour in the oven. Yep, the woman is still a goddess.

The magic ingredient, ladies, is Bisquick, which I am normally opposed to, but after several attempts at making pancakes (and cheesecakes) from scratch, I decided that it’s back to the good ole’ American basics, folks.

Here’s the recipe, I hope it makes you a goddess in someone’s eyes, too.

Ingredients:
– ¾ cup milk (skim if you’re feeling healthy)
– 2 tsp. vanilla
– 2 eggs
– 1/2 cup Bisquick
– 2 8 oz. blocks of cream cheese, cubed (light if you’re feeling healthy)

Topping:
– 1 ¼ cup
– 2 tsp. vanilla
– 2-3 tbsp. sugar, whip to taste
– Raspberries, strawberries or chopped walnuts to garnish.

Instructions:
1. Preheat oven to 350 degrees Farenheit.
2. In Blender, mix vanilla, egg, sugar, and Bisquick. Blend 15 seconds.
3. Add 1 of the 8 oz. cream cheese packages, blend 15 seconds more.

4. Add second cream cheese package, blend for 2 minutes.
5. Pour into pie plate.

6. Cook one hour and ten minutes (depends on your oven). The cheesecake will rise high, split on the top, and then it will fall. Do not overcook.
7. For topping, blend all ingredients together. (Optional: add chopped walnuts).

8. Garnish with chopped fresh strawberries or raspberries ( a second generation variation).
