Honey, Ricotta, Berry Muffins

My book club is kind of hard to beat: fabulous ladies, oodles of gossip, far too much wine, and delicious cuisine. My only issue is that my hostessing skills and culinary shops pale in comparison to the likes of Diana and Lauren.

Our December meeting was held over brunch, allowing us to get into the holiday spirit and spend plenty of time together. On the menu was a sausage egg bake, cinnamon rolls, a beautiful fruit salad, bacon, and truly bottomless mimosas.

As I nearly always resort to baking, I opted to try a fresh take on the prototypical blueberry muffin. These honey ricotta muffins were very easy to make, baked perfectly, and were finished in a jiffy (pun intended). Give them a go next time you’re in a rush and need to bring a healthy, fresh baked good.

Because store-bought is tacky.

Honey Ricotta and Berry Muffins
Yield: 12 muffins

Ingredients:
– 2 cups all-purpose flour
– 2 tsp. baking powder
– 1/2 cup sugar
– 1/2 tsp. salt
– 2 large eggs
– 1/4 cup honey
– 1/4 cup, plus 2 tablespoons whole milk
– 1 tablespoon pure vanilla extract
– 1/2 cup ricotta cheese
– zest of 1 lemon
– 1 1/2 cups mixed fresh berries (blackberries, and blueberries)

Instructions:
1. Preheat oven to 400 degrees F. with rack in the center position. Line a 12-cup muffin tin with fluted paper liners or grease the cups with butter.

2. In a large mixing bowl, sift together the flour, baking powder, sugar and salt.

3. In a separate bowl, whisk together the eggs and honey until they are blended together. Whisk the milk and vanilla extract into the wet mixture.

4. Mix the wet mixture with the dry ingredients and stir to combine.

5. Fold in the ricotta cheese and mix in the lemon zest.

6. Fold in the berries.

7. Spoon the mixture into the greased muffin cups so each is filled a little more than halfway. Add a blackberry to the top of each and push in slightly with your finger.

8. Bake for approximately 20 minutes, or until a toothpick is inserted and comes out clean. Let sit for 5 minutes before taking out of the pan.
