One of my fellow foodies at the office, who I can thank for many of my restaurant and recipe adventures over the past few months, changed my life with these Banana Everything cookies. Bogged down by an overwhelming amount of emails and one-too-many altercations for 9:00 a.m., I opened Dave’s “Important, come to my office” IM with a slight sense of dread that I’d forgotten a deadline. It was one of those days. When Dave subsided my anxiety by explaining that he had brought his favorite cookies into work, my day quickly brightened. He’s notorious for cooking with his five-year old sous chef and sharing his delicious treats, and as such, they disappear at a rapid pace. Which is why, in a moment of weakness, I justified eating way more than one dessert before breakfast. They were so good that I’m not even embarrassed to admit my breakfast pre-game.

I immediately got the recipe and made a new batch that evening, and was so pleased with the simplicity of using one bowl and the positive results that I decided this must be shared with more people. These can be made into a vegan recipe with the right chocolate chips, which was another draw for me. I’ve cut down on the sugar in the many times I’ve now baked these to make them even healthier and it hasn’t significantly altered the taste. You will likely already have most of these ingredients on hand, and the oats and chocolate chips can be used for a few batches so it’s a worthwhile investment. Put your overripe bananas to good use!

Warning: these cookies are highly addictive. Good luck eating just one when they’re fresh out of the oven, warm and gooey with chocolate, chunky and delicious with walnuts, and full of banana oat flavor. My boyfriend and I were so out of control with our first batch that we had to give the rest away to our neighbors. And engaging with New York City neighbors is a rare, rare occurrence. Needless to say, we’re now a big hit on our floor…

Bitches in the Kitchen: Banana Everything Cookies

Ingredients:

– 1 very ripe medium banana
– 1/3 cup canola oil
– 2/3 cup sugar
– 1 tsp. vanilla extract
– 3/4 cup plus 2 tablespoons all-purpose flour, or as needed
– 1/2 tsp. baking soda
– 1/4 tsp. salt
– 1/4 tsp. ground cinnamon
– 2 cups quick-cooking (not instant) oatmeal or rolled oats  (I made the mistake of getting quick-cooking steel cut oats in a moment of desperation.  The consistency was totally different, I wouldn’t recommend this)
– 1/2 cup chopped walnuts
– 1/2 cup chocolate chips (vegan, if desired).

Directions:

1. Preheat oven to 350 degrees. Lightly spray two baking sheets with oil. In a mixing bowl, mash banana well. Add oil, sugar, and vanilla, and mix with a strong fork. Add flour, baking soda, salt and cinnamon, and mix until just moistened.

2. Add oatmeal, walnuts, and chocolate chips. Using your hands or a sturdy spoon, mix well, making sure oats are well moistened. (If dough is very slippery, add one or two extra tablespoons flour.)

3. Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about 1 1/3 inches in diameter. Flatten slightly and place 2 inches apart on a baking sheet.

4. Bake until lightly browned, 10 to 12 minutes. Remove from heat and allow to cool for 2 minutes, then transfer to a rack to cool completely. Store in an airtight container.
