Recap: By The Park Grand Opening

To say I was excited for the grand opening of By The Park, a cookie and coffee shop in Lincoln Park, would be an understatement. First of all, who is not excited about cookies and coffee? Secondly, my sister had ordered By The Park cookies and biscotti for my bachelorette party in early August, and I had been obsessed ever since!

By the Park is inspired by Isabel Carpenter’s condo complex, “Belden By The Park”, and it’s proximity to Lincoln Park. It is totally park themed, down to park bench inspired tables, and it is adorable. It also doesn’t hurt that it is actually situated on the Park. Located right on Clark Street, Lincoln Park is a stone’s throw away, and could not be a more perfect backdrop for the adorable shop.

The owner, Isabel, previously worked as an investment banker.  She then scaled back and too a part-time role at a local barre studio. During her time off, she discovered her love of baking, The entrepreneurial type, she began to take her passion for baking to the next level by starting her own cookie baking business out of her home, and having friends and her barre-mates be her test bunnies. She started hosting parties, and selling her goods—always with the intent of opening her own business one day. This dream finally came to fruition this Thanksgiving.

Her love of the local Chicago parks is especially evident in her themed shop when it comes to the good stuff—her cookies and biscotti. “Lincoln Park”, “Millennium Park” “Central Park”, and “Griffith Park” are some of her decadent delicacies. And they are good. Some are chocolate, topped with coconut, others filled with caramel, or lemon and pistachio. And her lemon white chocolate biscotti is delicious!

All of her toffee and granola are made in house, where she bakes her cookies each and every day.

In addition, the cafe also brews and sells both hot and cold Stumptown coffee from Portland. It is the perfect one-stop shop for coffee and biscotti in the morning, or for dessert and a warm beverage in the evenings. With a cold winter upon us here in Chicago, this is just what we need in Lincoln Park to help get us through the cold season and months of snow ahead.
