Bitches in the Kitchen: Poached Salmon

I’m leaving for two weeks’ vaca tomorrow (and I won’t be blogging), and so I had an impromptu dinner party Tuesday night to catch up with some friends before I leave. Or rather, a few of my friends said, Becca, we’re coming over. And I said, ok, I’ll cook.

I decided to poach salmon, inspired by a dinner party dish that my friend Joanna created last month. Cooked in dry white wine and herbs, the salmon comes out absolutely soaked (literally) in flavor and moisture. So amazing. To complement it, I whipped up a caprese salad and some classic yellow rice.

Here’s what you need:

  • 2 pounds salmon fillets, cut into 4 pieces
  • 1 cup dry white wine
  • 1/2 cup water
  • 2 tablespoons butter, softened
  • 1 1/2 teaspoons dried parsley or dill
  • 1 1/2 teaspoons minced garlic
  • salt and pepper

Here’s how you do it:

  • Boil the wine, water, garlic, dill and butter in a large non-stick skillet
  • Slide the salmon pieces into it and make sure they’re covered with lots of liquid
  • Reduce the heat to medium and poach the salmon until the flesh is firm and cooked through, takes about 10 to 15 minutes.

For the caprese salad, simply chop up five or six tomatos on the vine, a large ball of mozzarella, and add minced garlic, salt, pepper, olive oil and balsamic vinegar to taste.
