Butterscotch White Chocolate Cookies

If you hadn’t noticed, I was in a bit of a cookie-baking craze in February. Well, it was cold outside, so I was nesting indoors. Forcing myself to relax. Watching Downton Abbey. Reading Vogue. Baking cookies.

Oh, yes, I was also working my regular zillion-hour weeks. But, I am learning to relax. Baking is perfect for a Type-A gal forcing herself to stay in because (1) you can do it in your pink bathrobe, (2) you’re still doing something, often multi-tasking, and (3) it involves sugar.

The recipe was found via Pinterest and adapted from a website called I Heart Naptime. I guess there’s not much better than cookies and milk to get you ready for naptime.

Ingredients:
– 1 cup brown sugar
– ½ cup butter softened
– ½ cup vegetable oil
– 2 eggs
– 1 tsp. salt
– 1 tsp. baking powder
– 1 tsp. baking soda
– 1 tsp. vanilla
– 1/2 tsp. almond extract
– 3 cups flour
– 1/2 bag white chocolate chips
– 1/2 bag butterscotch chips

Instructions:
1. In a large mixing bowl, cream together butter and sugar. Beat in one egg at a time. Mix in oil, vanilla and almond extract.

2. Mix dry ingredients in a separate bowl. Slowly mix into wet ingredients. Once smooth, fold in chips.

3. Preheat oven to 350 F.
4. Bake  for 7-10 minutes, or until lightly browned.
